We feel that Chenin Blanc is best suited to be the heart ofthewineand that is why it forms the biggest portion of theco-fermentation. The aromas are very complex and changeconsiderably in the glass. Perfume, spice, tea, stone fruit andcitrusblossoms are some of the notes that can be detected.In the mouth the texture and ripeness and gentle tanninsresult ina wine that has incredible length andacomplexflavour profile.The wine alsohas wonderful fruit volumecharacterised by stone fruit and mineral flavours. The aromas arebrooding but with complex notes of pepper, liquorice, perfume, and black cherries. Thepalate entry is quite dense with lavender and dark berry fruit. THE CAPERITIF is a vermouth-styled aperitif- an aromatised fortified wine. The addition to a wine of numerous botanicals, fruits, alcohol, sugar and bitters inherently changes the nature of the wine. It becomes vermouth. A high quality white wine base is the starting point–this is made on Kalmoesfontein. To this wine, a neutral grape-derived alcohol spirit is added to increase the alcohol to16.5vol%. Once this is level of alcohol is achieved, we follow the propriety recipe or formula and add 46 different ingredients. These ingredients include a variety of fruits, garden herbs, spices, a bouquet of various flowers, some roots and barks for bitterness as well as the distinctive and unique Fynbos. 54% Cinsault | 23% Grenache | 23% Shiraz The aromas are perfumed, peppery, spicy and exhibit ripe red fruit notes. As always, the palate texture of this style of wine is supple, smooth on the entry but with enough grip and freshness to finish dry and refreshing. In the mouth the texture and fineness of fruit tannin and drinkability of the wine is immediately evident. The Chenin Blanc spent time on its lees in concrete tanks and old casks – this is an important part of the maturation and gives incredible texture and palate weight to the wine. The aromas are flinty with honey, orange blossom and white stone fruit notes.
