Our Cap Classique takes the name Skaamgesiggie or bashful Sugarbush as it is affectionately known, a very rare species of (Protea pudens) with unique downward hanging flowers. This timid flower is endemic to the Strandveld biosphere and is so endangered that it has been classified as a ‘red data’ species. This delicate Cap Classique is made in the traditional method from Pinot Noir grapes and shows notes of strawberry, cherry and oyster shell and has a fine, lingering mousse which delights the palate. Enjoy on its own or with oysters, salads, sushi, salmon and trout and duck breast. Served very well chilled, ideally 4-8 degrees Celsius.
This elegant and delicious bubbly combines expressive aromas of fruit and brioche on the nose. On the palate the bubbles are fine and the mousse lingering and you can expect fragrances of zesty lemon and green apple flavours. Blanc de Blancs This Cap Classique celebrates a seal and completion. A promise of lifelong allegiance. The maiden vintage was released on Philip Jonker’s wedding day. A golden colour with a green tinge and a delicate stream of bubbles gliding to the surface. Lemon grass, fynbos-honey, cucumber, melon and mint leaves makes for a complex nose. The palate is crisp and focussed with flavours of green apple, citrus and mint leaves. A tight and minerally style of Blanc de Blanc. Food Pairing: On its own or with Sushi and Oysters. This Cap Classique also has enough structure to compliment main course dishes with flavours of citrus and lemon grass. 60% Chardonnay | 40% Pinot Noir Lively mousse, creamy biscuit on the palate and long aftertaste. A vibrant Cap Classique to celebrate every day. The grapes are picked riper to show richness and attractive fruit at an earlier stage. The wine is matured on lees for up to three years. This vibrant pink Rosé delivers aromas of freshly crushed strawberries and cherries on the nose. On the palate the bubbles are fine and the foam persistent with flavours that are reminiscent of fresh, crisp red berries. 70% Chardonnay | 30% Pinot Noir The wine is refreshingly dry with abundant strawberry and raspberry flavours. It has a delicate mousse which supports a dry, rich palate.
60% Chardonnay | 40% Pinot Noir The Groote Post Brut is an elegant refreshing Cap Classique displaying a vibrant pale gold colour, a fine creamy mousse, zesty notes of green apple and white pear with hints of brioche, a well-rounded velvety yet lively mouthfeel and a crisp lingering finish. 91% Chardonnay | 9% Pinot Noir Elegant citrus blossoms with fresh lime aromas. Secondary aromas of nougat, roasted nuts and hints of proving dough. Bright, fresh and elegant palate entry. Aromas of grapefruit, ripe lemon and pear forms a structured mid-palate. The mousse shows finesse and texture with a restrained presence. Length develops delicately on the palate with fine tertiary aromas of caramelised honey, vanilla and dried fig. 71% Chardonnay | 29% Pinot Noir Ripe cherries, red lollipop and raspberry aromas provide a delicate profile to the wine. These are followed by some hints of grapefruit and wild rose. The palate opens with a voluptuous texture supported by elegant acidity. Initially fresh red berries, wild plum and spice. The length and richness of the palate develops a complexity with raspberry compote and hints of blueberries and aniseed. 45% Grenache Blanc, 30% Viognier, 25% Grenache In true Fairview style we’ve selected unique varieties from our own vineyards to make this exciting Cap Classique. We only used Viognier and Grenache blanc for the base wine resulting in a crisp, fresh wine with lower residual sugar making it even more age worthy. Food Pairing: Seafood, summer salads and soft cow's or goat's cream cheeses with a chalky texture.
