Calcrete is only found in the limestone rich appellation between Bonnievale and Robertson. Terroir of arid, broken shale rock of ancient petrified maritime deposits. Calcrete defines this region with its crystalline minerality, a taste of wet stone and almost maritime sea spray, saline palate and oyster shell minerality. Described as elegant, linear and minimalist. Bright, vibrant and limey. Luminescent light lime-green radiance. Louisvale’s signature wine. This ultra-premium Chardonnay has been matured in the finest French Oak available. The nose is intensely complex with elegant aromas of lemon blossom, pineapple and apricot, toast and spice notes. The palate is smooth and buttery with a lingering aftertaste. The grapes for this quality wine were carefully selected from blocks spread across Louisvale. After hand picking and carefully pressing, the wine was 100% barrel fermented and spent 8 to 10 months in oak. Ataraxia Chardonnays are made with complete deference to expressing our terroir over trying to conjure an expression of the grape itself through winemaking alchemy. In the quest for accuracy of this expression, spontaneous fermentation comprised part of a minimalist, non-interventionist winemaking approach. This wine is 100% barrel fermented and matured in specially selected small French oak barriques sourced exclusively from Burgundian coopers. The result is a Chardonnay that is New World in provenance but Old World in stylistic leaning. Broad-shouldered but narrow-hipped, it effortlessly manages to be both subtle and intense. An assertive mineral acidity is beautifully balanced by a compelling intensity of fruit. A stylish, world-class Chardonnay.
