Ataraxia Chardonnays are made with complete deference to expressing our terroir over trying to conjure an expression of the grape itself through winemaking alchemy. In the quest for accuracy of this expression, spontaneous fermentation comprised part of a minimalist, non-interventionist winemaking approach. This wine is 100% barrel fermented and matured in specially selected small French oak barriques sourced exclusively from Burgundian coopers. The result is a Chardonnay that is New World in provenance but Old World in stylistic leaning. Broad-shouldered but narrow-hipped, it effortlessly manages to be both subtle and intense. The Chenin Blanc spent time on its lees in concrete tanks and old casks – this is an important part of the maturation and gives incredible texture and palate weight to the wine. The little group happily roamed among the vineyards, showing rare discernment by selecting some of the ripest berries from the vines. Those berries have been used to make this white blend, a light bright green, medium bodied wine with aromas of apricots and pear and a zesty acidity.
