Ruby red in the glass. Plush aromas of red and black berry fruits, cherry, vanilla pod and subtle warm spices. Soft and juicy with a generous mouthfeel, with more red berries and plums on the palate and a velvety finish. Will age well for 3 – 5 years

Grapes were harvested, destemmed and put into stainless steel tanks. Fermentation took about 10 days on the skins with 2 – 3 aerated pump overs daily, which allowed for good colour and fruit flavour extraction. The wine was then pressed and allowed to undergo malolactic in older (3rd and 4th fill) French and American oak barrels, as well as in tank. Predominantly French oak (80%) was used. The wine was matured for 10 months before blending and bottling commenced.
The combination of innovation and tradition also mirrored in the unusual crest of the winery. The goat has become the estate’s mascot long ago and has become part of Fairview’s identity. A legend goes that some errant members of Fairview’s long-established goatherd once escaped from their paddock into the Fairview vineyards after Charles Back’s young son Jason accidentally left the gate open. The little group happily roamed among the vineyards, showing rare discernment by selecting some of the ripest berries from the vines. Those berries have been used to make this white blend, a light, bright green, medium-bodied wine with aromas of apricots and pear and zesty acidity.
